Christmas is upon us and I've been working on recipes for a low-carb Holiday Feast that even people without a Type 2 diagnosis would love.
I'm not talking just a dry turkey with green beans and an iceberg lettuce salad on the side. I'm talking about a bird and a ham and cornbread dressing and pies and cookies and punch . . . and finished off with a cup of Cafe Au Lait and another slice of pie or a cookie or two. Sound good?
In honor of the fall season, as a treat and foretaste of what's to come I thought I'd drop a recipe for something tasty and sweet. A "Cinnamon Roll" cookie/bite that you can make and serve any day as a treat or a great breakfast option.
This recipe is made using readily available Carbquick, but the forthcoming cookbook will also include instructions for using Carbalose. The Carbalose recipe is a bit more involved, but I believe produces a superior product.
Cinnamon Roll Cookie Bites
1.5 cup Carbquik (10g)
1 cup Splenda (0g)
1/3 cup Hot Water (0g)
1/2 cup Splenda (0g)
2 Tbsp ground Cinnamon (0g)
1 tsp Butter extract (0g)
1/4 tsp Vanilla extract (0g)
1/2 cup Pecan “chips” (2g) OPT
In a large bowl put 1.5 cup Carbquick and add all (1.5 cup) of the Splenda. Stir with a fork to fully mix the ingredients.
Next, add 2 Tablespoons of Ground Cinnamon. If you like cinnamon rolls with nuts, all the optional .5 cup of Pecan bits/chips. These should be small broken bits rather than large pieces as they are going into cookies. Stir well again to ensure the ingredients are well mixed. Using the fork make a "well" in the middle of the mixed dry ingredients to receive the wet ingredients.
Next, measure 1/3 cup of hot water, then add 1/4 teaspoon vanilla extract, 1 teaspoon of butter extract. Stir the mixture and pour into the well in the dry ingredients. Using the fork, stir the dry ingredients from the outer edges of the bowl to the middle and as the ingredients mix they will begin to "clump". This is normal.
Once the mixture seems to stop coming together, you'll still see loose ingredients in the bottom of the bowl. It's time to get your hands dirty. Using your hand, begin squeezing the dough mixture and incorporating the remaining dry mixture.
Using a 1 Tablespoon measure, make 1 Tablespoon balls of dough and place on parchment paper. If you prefer "bonbon"-type bites, do nothing more. If you prefer more of a cookie, use three fingers and lightly press the dough balls into cookie-shaped circles about 2 inches across. You should be able to get about 20 cookies.
Bake in a 450 degree preheated oven for about 10 minutes.
Remove, cool, and enjoy.
Each "cookie" is about .6g carbs (if you get 20 cookies).
